Esteban Salonga traces how the plantation model, born in South America and Africa, was transplanted here. When the Suez Canal opened global trade, export crops like sugar became king. For a time, it coexisted with subsistence farming. There was enough land and enough farmers. But as sugar spread from Iloilo and Negros into the heartland of Luzon, it started eating into the very breadbasket that fed the Filipino people. Arable land shifted from feeding communities to feeding foreign markets.
